Yemenite Flatbread (Lachuch)

Ingredients

Instructions

  1. In a blender or Ninja, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until it foams.

  2. Add flour, baking powder, and salt. Blend until smooth, cover, and let the batter rest for 1-2 hours.

  3. Use a cold pan for every flatbread. Lightly oil the pan using a paper towel for the first bread only.

  4. Pour the batter into the cold pan, then place it on medium-high heat. Cook until the bubbles in the center pop—no flipping required.

  5. Transfer the cooked bread to a plate, cover with a paper towel, and place a lid over it to keep it soft.

  6. Wash the pan under cold water between each bread to ensure perfect results every time.
