Golden Cauliflower Schnitzel

  1. Bring a large pot of salted water to a boil. Add the whole cauliflower and cook for 9 minutes. Remove and let cool slightly.

  2. Cut the cauliflower in half, then slice each half into two thick steaks, forming four large schnitzels.

  3. In a bowl, whisk together the eggs, Dijon mustard, salt, pepper, and minced garlic.

  4. Dip each cauliflower schnitzel into the egg mixture, then coat thoroughly with breadcrumbs.

  5. Heat oil in a frying pan over medium heat. Fry each schnitzel until golden brown, about 3-4 minutes per side. Transfer to a cooling rack.

  6. For the sauce, mix rice vinegar, sesame oil, chili sauce, date syrup, lemon juice, chopped cilantro, and soy sauce in a bowl.

  7. Serve the schnitzels with the sauce on the side.
