For the Chili Oil Sauce

Prepare the Potato Mixture

  1. Peel and grate the potatoes.

  2. Combine with potato starch, starting with 4 tablespoons of water, salt, and pepper to create a moldable dough.

  3. Adjust the consistency with more water if necessary.

Shape and Cook

  1. Instead of shaping the potato mixture into mushrooms, roll it into small balls. Then, press your thumb into the center of each ball to create ring shapes resembling calamari.

  2. Boil these rings in water for 5 minutes, then transfer to ice water to stop the cooking process.

Make the Chili Oil Sauce

  1. In a bowl, mix the crispy chili, dark soy sauce, vinegar, roasted sesame seeds, scallions, minced garlic, sliced red chili, and sugar.

  2. Heat the canola oil until very hot, then carefully pour it over the sauce ingredients, stirring well to combine.

Combine and Serve

  1. After cooling, drain and pat dry the potato calamari rings. Toss them in the chili oil sauce to coat evenly.

  2. Serve immediately, offering a delightful blend of textures and flavors.
