Gluten-Free Falafel Waffles

  1. Prepare the Falafel Batter: In a food processor, combine the soaked chickpeas, cilantro, parsley, basil, onion, and garlic. Season with 1 teaspoon of cumin, salt to taste, 1/2 teaspoon of black pepper, and add the 1/2 teaspoon of baking soda. Pulse until the mixture is coarsely ground and holds together when pressed.

  2. Preheat and Prepare Waffle Maker: Preheat your waffle maker. Once hot, lightly spray the surfaces with olive oil to prevent sticking.

  3. Cook the Waffles: Scoop enough falafel mixture onto the waffle maker. Close the lid and cook for approximately 10 minutes, or until the falafel waffle is golden and crispy.

  4. Serve: Serve the falafel waffles hot, drizzled with olive oil, and accompanied by yogurt sprinkled with za’atar on the side.
