Creamy Basil Pasta with Burrata

Instructions

Prepare the Pasta

  1. In a large bowl, mix the flour and salt. Create a well in the center and crack in the eggs. Add the basil olive oil.

  2. Using a fork, gradually incorporate the flour into the eggs until a dough forms.

  3. Transfer the dough onto a floured surface and knead until smooth and elastic, about 10 minutes. Cover with plastic wrap and let it rest for 30 minutes.

  4. Roll out the dough with a pasta machine or by hand until it’s thin and flat. Cut the pasta into large chunks.

Cook the Pasta

  1. Bring a large pot of salted water to a boil.

  2. Add the pasta chunks and cook for 3-4 minutes, or until al dente.

  3. Drain and set aside.

Make the Sauce

  1. In a blender, combine the minced garlic, fresh basil leaves, salt, pepper, and water. Blend until smooth.

  2. Pour the blended mixture into a pot and add the heavy whipping cream. Bring to a gentle boil, stirring occasionally until the sauce thickens.

Assemble the Dish

  1. Place the cooked pasta chunks on a plate and pour the creamy garlic basil sauce over them.

  2. Top with fresh Burrata cheese and drizzle with reduced balsamic vinegar.
