Candied Orange Slices with Dark Chocolate

Ingredients

For the chocolate coating

Instructions

  1. Cut the oranges into slices, pour boiling water over them to cover, let them sit for 10 minutes, then drain the water.

  2. Add the water and sugar to a saucepan over medium heat, stir very well and bring to a boil.

  3. Add the orange slices (about 1/4 inch thick). Put the slices into the hot water and continue cooking on medium heat.

  4. Once boiling again, turn the heat down slightly to medium-low and continue to cook for about 45 minutes. Turn the orange slices every 10 minutes.

  5. When the slices are done, they will look almost transparent. Take them out carefully with a fork, place them on a rack to drain, and let them sit out for 24-48 hours to dry.

  6. You can toss them in a bit of granulated sugar to keep them from sticking! I love to dip each one of the slices in dark chocolate.

  7. For the chocolate coating, melt 100g dark chocolate in the microwave for 30 seconds, take it out, mix very well, and put it back for another 20 seconds. Add 1 teaspoon olive oil and stir until no lumps remain. The coating should be thick but not stiff; let it cool. If you want, you can add a sweetener like maple syrup.

  8. Dip the orange slices in the chocolate halfway. Place on parchment to cool. Sprinkle on sea salt. Place the parchment on a baking sheet and cool until the chocolate is set.

Tips

  • As always, be creative. You don’t have to use oranges; you can use any citrus fruit you like to make your unique version. Candied lemons with white chocolate or blood orange are also bright and pretty.
