Baked Potato Star Bites

  1. Mash the boiled potatoes with salt, pepper, and cornstarch. Place the mixture between two pieces of baking parchment and roll it out with a rolling pin.

  2. Use star-shaped cookie cutters to create potato shapes. Place them on a baking sheet.

  3. Use toothpicks to create eyes on each star and a teaspoon to make either a smiley or a sad face, shaping the mouth.

  4. Bake the potato stars in a preheated oven at 375°F (190°C) for about 20-25 minutes, or until they turn golden brown.

  5. While they’re baking, prepare Sriracha Mayo for dipping.

  6. Serve the baked potato star bites with the Sriracha Mayo for a healthier, but still delicious, alternative.
