Stuffed Apples with Farmer Cheese

Stuffed Apples with Farmer Cheese

Makes 4 apples

Ingredients

Instructions

  1. Preheat oven to 350°F (175°C).

  2. Slice off the top of each apple, core and scoop, leaving ~1 cm walls.

  3. Blend Lifeway Farmer Cheese, egg, honey, sugar, cinnamon, zest, and vanilla with some of the scooped apple flesh until smooth. Fold in dried cherries/raisins and nuts if using.

  4. Spoon or pipe the filling into apples. Place the tops back on and insert a cinnamon stick as the “stem.”

  5. Set apples in a baking dish with a splash of water or apple juice at the bottom. Bake 25–30 minutes, until tender and the filling is set.

  6. Drizzle with honey before serving.

Tips

  • Cut the apples in half for smaller portions.
  • Delicious warm or chilled. Try them with a drizzle of honey or a scoop of ice cream. Perfect to make ahead for the holiday table.
